RICOTTA CAVATELLI 
4 c. flour
1 egg
1 lb. ricotta
1 tsp. salt
1/4 c. milk

Mix well in bowl. Turn on floured board, knead slightly. Place dough in a bowl, cover with towel. Let rest for 10 minutes. Cut in half and in strips. Roll and dip in flour. Cut with machine.
