SQUASH SOPHIA 
4 zucchini
4 crookneck squash
4 tbsp. minced onion
1 tsp. salt
Pepper
1 tsp. oregano
2 tsp. basil
2 c. shredded Cheddar cheese
butter

Cut zucchini and crookneck in 1/4 inch slices. Combine onion, salt, pepper to taste, oregano and basil. Layer some squash in 2 quart baking dish and sprinkle lightly with onion mixture, then part of the cheese and dot with butter. Repeat layers until all ingredients are used. Cover and bake at 325 degrees for 1 1/4 hours. Makes 4-6 servings.
