MEATBALLS ALA GRAMMARO | |
This was the recipe my Grandmother brought with her from Grassano, Italy in 1915. I guarantee you will be asked time and time again to make them! 2 lb. lean ground round beef 1/2 lb. ground veal 1/2 lb. loose Italian sausage 1/2 cup finely chopped onion 3 cloves garlic, chopped handful of chopped parsley 2 eggs 1 cup milk 2 cups Italian seasoned bread crumbs salt, to taste Mix all the above ingredients by hand in a large mixing bowl. Roll into 3-inch balls and brown in frying pan filled with extra virgin olive oil (EVOO) about 1/8-inch high at medium heat. Add to your favorite sauce about 2 hours prior to serving.
