FILLING: 1 c. dates, cut up (raisins can be used) 1/3 c. water 2 tbsp. sugar 2 tbsp. lemon juice In small saucepan, simmer over low heat. Stir until thickened. Remove from heat and cool. BATTER: Cream: 1/2 c. butter Add: 1 c. brown sugar (packed) Cream well. Add: 1 egg 2 tbsp. milk Sift together and blend in: 1 1/2 c. flour 1 tsp. baking powder 1/4 tsp. baking soda 1 tsp. cinnamon 1/4 tsp. nutmeg Add: 1 c. oatmeal Blend in real well. Grease 9x9 inch Pyrex baking dish. Put layer of batter on bottom. Spread date filling over batter. Put remaining batter on top spreading over all. Bake 350 for 35 to 40 minutes. Cut when cool. |
