SOFT SUGAR COOKIES
1 1/2 c. sifted confectioners' sugar
1 c. butter
1 egg
1 tsp. vanilla
1/2 tsp. almond flavoring
2 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. cream of tartar

Mix sugar and butter. Add egg and flavorings; mix thoroughly. Measure flour by dipping method or by sifting. Stir dry ingredients together and blend in. Refrigerate 2 to 3 hours.

Heat oven to 375 degrees (quick moderate). Divide dough in half and roll 3/16 inch thick on lightly floured pastry cloth. Cut with cookie cutter; sprinkle with sugar. Place on lightly greased baking sheet. Bake 7 to 8 minutes, or until delicately golden. Makes 5 dozen 2 to 2 1/2 inch cookies.

Note: If you use self-rising flour, omit soda and cream of tartar.
