RUTH SORKIN'S ZUCCHINI SOUP 
1 onion, chopped
4 med. zucchini, sliced
3 c. hot water
3 bouillon cubes

Cook onion in a little oil, until glossy. Add zucchini, stir and cover. Add water and cubes. Simmer about fifteen minutes until zucchini is tender. Puree zucchini. Add salt and pepper, to taste. Serve hot or cold.
