CHICKEN DIVAN | |
1 lg. bunch broccoli 1 lb. skinned chicken pieces or 4 skinned breasts 1 c. quick rice 1 no added salt chicken broth 1 c. nonfat plain yogurt 2 tbsp. reduced-calorie mayonnaise 1 tbsp. flour 1 tbsp. lemon juice 1 tsp. curry powder Preheat oven to 375 degrees F. Wash broccoli and cut off the full spears. MICROWAVE spears in 1 tablespoon water in covered microwave dish until color changes (about 3 minutes). Drain. In same dish, combine chicken, rice and broth. MICROWAVE covered for 8 minutes. In the meantime, combine yogurt, mayonnaise, flour, lemon juice and curry powder in a small bowl. When chicken and rice are done, place broccoli spears on top. Pour curry dressing over broccoli. Cover. Bake for 15 minutes. Serve. |
