CHICKEN DIVAN 
1 lg. bunch broccoli
1 lb. skinned chicken pieces or 4 skinned breasts
1 c. quick rice
1 no added salt chicken broth
1 c. nonfat plain yogurt
2 tbsp. reduced-calorie mayonnaise
1 tbsp. flour
1 tbsp. lemon juice
1 tsp. curry powder

Preheat oven to 375 degrees F. Wash broccoli and cut off the full spears. MICROWAVE spears in 1 tablespoon water in covered microwave dish until color changes (about 3 minutes). Drain. In same dish, combine chicken, rice and broth. MICROWAVE covered for 8 minutes.

In the meantime, combine yogurt, mayonnaise, flour, lemon juice and curry powder in a small bowl. When chicken and rice are done, place broccoli spears on top. Pour curry dressing over broccoli. Cover. Bake for 15 minutes. Serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
