PICKLED BEETS 
4 bunches beets
2 c. vinegar
1/2 c. beef juice
1/2 c. brown sugar
2 tsp. salt
Sm. piece of bay leaf
4 tsp. pickling spice

Combine vinegar, beat juice, sugar, salt, and spices. Bring to boil, add already cooked and peeled beets (cut into size you like). Simmer slowly 15 minutes. Pack in sterilized canning jars, fill to within 1/8 inch of top. Seal. If more liquid is need add boiling water.
