CRUSTLESS SPINACH PIE 
1 lg. onion, chopped
1 tbsp. oil
1 pkg. (10 oz.) frozen spinach, thawed with as much moisture removed as possible
5 eggs
1/2 lb. Muenster cheese, grated
Salt and pepper, to taste

Preheat oven to 350 degrees. Grease a 9 inch pie plate. In skillet, heat oil and saute onion until soft. Add spinach and cook 5 minutes over medium heat. Cool. Beat eggs and add cheese. Stir this mixture into spinach and onion and season to taste. Spread mixture into pie plate. Bake until brown, about 40 minutes.
