SUNBURST STIR - FRY 
1 lg. sweet red pepper, cut up
2 tbsp. cooking oil
1 onion, cut into wedges
2 cloves garlic, minced
1 sm. yellow summer squash, cut into bite-size pieces
1 lb. boneless sirloin steak, trimmed of fat
2 tbsp. soy sauce
Hot cooked rice

In a blender container blend red pepper until ground. In large skillet heat 1 tablespoon oil. Stir fry onion and garlic, 2 minutes. Add squash; stir fry 1-2 minutes. Remove from skillet. Cut steak into thin bite-size strips. Add remaining oil to skillet. Stir fry beef, half at a time, for 2-3 minutes or until no longer pink. Return all beef to skillet. Add soy sauce, crushed red pepper and squash mixture. Add 1/4 teaspoon black pepper. Heat through. Serve over rice.
