COTTAGE CHEESE BREAD (PASKA) 
1 lb. dry cottage cheese
8 egg yolks
1/2 tsp. salt
1 c. sugar
3 c. flour
1 c. white raisins
1/2 tsp. yellow food coloring
2 tbsp. melted butter
1/2 tsp. lemon extract
1 pkg. dry yeast
1/4 c. warm water
1 tbsp. sugar

Mix dry yeast with warm water and 1 tablespoon sugar. Let rise for 10 minutes. Put dry cottage cheese through fine sieve; add yolks, sugar, coloring, salt and lemon extract. Let set overnight in a warm place. Soak raisins in enough warm water to cover them. Bring to boiling point. Let cool and drain. Add raisins and yeast mixture to cheese mixture. Add butter and flour to make a soft dough. Knead until smooth and elastic and let rise until double in bulk. Punch down and let rise until double in bulk again.

Place loaves in buttered and floured pans.

Bake at 350 degrees until bread is golden and sounds hollow when tapped on bottom.
