CHICKEN BREASTS WITH VEGETABLES
IN WINE
 
4 chicken breasts, boned and skinned
2 c. carrots, thinly sliced
2 c. celery, thinly sliced
1 c. onion, chopped
Butter as needed
Parsley
Salt and pepper to taste
1/2 to 3/4 c. white wine

Brown chicken breasts quickly in butter. Add carrots, onion, celery, parsley, salt and pepper. Simmer slowly until done. Add more butter, if needed. Approximately 10 minutes before completely done, add wine.
