APPLESAUCE POPPY SEED CAKE 
3/4 c. water
1/4 c. poppy seed
1 pkg. white cake mix
1 1/4 tsp. baking soda
2 egg whites
1 c. applesauce

Soak water and poppy seeds. Beat together 3 minutes on high: cake mix, soda, egg whites, applesauce and water with poppy seeds. Bake at 350 degrees for 30 minutes. Cool.

FILLING:

1/4 c. flour
2/3 c. brown sugar
1/8 tsp. salt
2 egg yolks
1 egg
1 1/4 c. milk
Vanilla

Cook until thick. Pour onto cake, cool.

FROSTING:

3 1/2 tbsp. flour
3/4 c. milk

Cook to a paste, let cool completely. When cool, add:

3/4 c. sugar
3/4 c. butter
1 tsp. vanilla

Beat at high speed for 5 minutes.
