LONDON BROIL WITH VEGETABLES | |
2-3 lb. London Broil FOR MARINADE: 1 c. lemon juice 1/4 c. oil 1 lg. onion, sliced 1/2 tsp. pepper 1 tsp. oregano 1/2 tsp. paprika 1/2 tsp. salt 1/2 tsp. garlic 1/4 c. water Mix all the ingredients of the marinade together. Pour the marinade over the meat. Score the meat on both sides. Allow to remain in marinade 2 or 3 hours. TO COOK: Place London Broil in all of the marinade mix, into a large deep oven pan, then put large bag of broccoli, 1/2 bag of cauliflower, 1/2 bag of peas, whole bag of carrots, 1 bag of corn (any or all vegetables optional). Cover pan with heavy duty aluminum foil and broil for 45 minutes or until meat is pink inside. Serves approximately 6. |
