LONDON BROIL WITH VEGETABLES 
2-3 lb. London Broil

FOR MARINADE:

1 c. lemon juice
1/4 c. oil
1 lg. onion, sliced
1/2 tsp. pepper
1 tsp. oregano
1/2 tsp. paprika
1/2 tsp. salt
1/2 tsp. garlic
1/4 c. water

Mix all the ingredients of the marinade together. Pour the marinade over the meat. Score the meat on both sides. Allow to remain in marinade 2 or 3 hours.

TO COOK:

Place London Broil in all of the marinade mix, into a large deep oven pan, then put large bag of broccoli, 1/2 bag of cauliflower, 1/2 bag of peas, whole bag of carrots, 1 bag of corn (any or all vegetables optional). Cover pan with heavy duty aluminum foil and broil for 45 minutes or until meat is pink inside. Serves approximately 6.

Hi Carol,

The recipe calls for broiling, which would be the highest temperature setting of your oven. Check the doneness at the halfway mark (or even less), depending upon the thickness of the steak. For best results use a meat thermometer.
