PINEAPPLE COCONUT COOKIES 
1 c. shortening
1 1/2 c. sugar
2 eggs
1/2 tsp. vanilla
2 3/4 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1 c. drained, crushed pineapple
1 c. shredded coconut
3/4 tsp. lemon extract

Preheat oven to 350 degrees. Cream shortening, sugar, eggs and mix well. Add pineapple, coconut and flavoring. Fold in sifted dry ingredients and drop by teaspoons on greased cookie sheet. Bake 12-15 minutes and enjoy! Yield: 3.5 dozen.
