FILLING FOR MANICOTTI 
1 lb. ricotta
2 egg yolks
Salt & pepper to taste
1 tbsp. Parmesan cheese
Dash of cinnamon

Blend well in mixer. In an oblong baking dish, pour some spaghetti sauce over bottom. In each shell, place 1 tablespoon filling, roll up and place in baking dish. Pour sauce over top of manicotti rolls and sprinkle with more Parmesan cheese. Bake at 350 degrees for 35 to 40 minutes.
