IMPOSSIBLE PIE #2 (BEST) 
4 eggs
1 3/4 c. sugar
1/2 c. flour
2 c. milk
1/2 stick (1/4 c.) butter, melted
1 (7 oz.) pkg. coconut

Beat together all ingredients but coconut until thoroughly blended. Stir in coconut and pour into 2 well-greased, 9-inch pie pans. Bake at 350 degrees for about 30 minutes or until pie tests done in the center and is lightly browned.

NOTE: Some readers add 1 teaspoon baking powder and 1 teaspoon vanilla to this recipe. All report that both recipes make a rich custard-like dessert with about a 1/4 inch crust at the bottom.
