IRISH POTATO SOUP 
3-4 potatoes
2 tbsp. butter
1 med. onion
1 c. half and half
1 can Swanson chicken broth
Salt and white pepper to taste

In enough water to cover, cook potatoes, onions, and butter until done. Add half and half, chicken broth; cook slowly for about 1 hour. If not thick enough add cornstarch until desired thickness is reached. Garnish with parsley or chives.
