OATMEAL CHOCOLATE CHIP MUFFINS 
3/4 c. oats
1/2 c. oat bran
1 1/4 c. skim milk
2 egg whites
1/2 c. vegetable oil
1/2 c. brown sugar
1 1/4 c. flour
4 tsp. baking powder
1 tsp. salt
1 c. chocolate chips (semi-sweet)

TOPPING:

1/4 c. walnuts
1/2 tsp. cinnamon

Combine oats, bran and milk. Allow to stand 15 minutes. Preheat oven to 400 degrees.

Stir egg, oil, brown sugar, chocolate chips into oat mixture.

In a large bowl combine flour, powder and salt. Add oat mixture to flour mixture. Stir just until dry ingredients are moistened.

Fill 12 lightly greased muffin cups 2/3 full. Mince walnuts and add cinnamon. Sprinkle mixture on top of muffins. Bake 20 to 25 minutes, or until toothpick comes out clean.
