BUTTER - PUFFED BAKED POTATO 
4 med. lg. potatoes
8 tbsp. butter, melted
2 eggs, well beaten
1 tsp. salt
1/2 tsp. baking powder
1/2 c. hot milk
2 tbsp. pimento
Dash of pepper & paprika

Rub outside of clean potato with butter. Bake at 425 degrees for 45-60 minutes. Cut slice from top of each potato and scoop out pulp; mash this with baking powder, salt and pepper. Pour in melted butter. Stir and blend well. Add eggs, followed by hot milk and pimento. Whip thoroughly until light and fluffy. Mixture should be smooth.

Spoon into potato shells and sprinkle with paprika. Bake at 300 degrees for 45 minutes, until puffed high and lightly browned. Serve at once. Serves 4, depending on size of potato. (These potatoes are delicious!)
