WALNUT CHICKEN STIR-FRY 
3 tbsp. oil
1 c. walnuts
2 green peppers, cut in strips
2 carrots, sliced diagonally
2 c. chicken meat, cut into strips
2 tbsp. cornstarch
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. ginger
1/2 tsp. crushed red pepper (omit, if desired)
3 tbsp. soy sauce
4 green onions, sliced diagonally

Stir-fry walnuts in hot oil until golden; Remove and set aside. Stir-fry green pepper and carrots until crisp-tender; remove and set aside.

Stir-fry chicken. Combine cornstarch, sugar, salt, ginger, pepper, and soy sauce. Add to chicken in pan along with walnuts, green pepper, carrots, and green onions; toss together until thoroughly coated. Serve over cooked rice. Serves 6.
