BROCCOLI-MUSHROOM CASSEROLE 
2 (10 oz.) pkg. frozen chopped broccoli
1 c. Hellmann's mayonnaise
1 c. sharp Cheddar cheese, shredded
2 eggs, slightly beaten
1 can cream of mushroom soup
Ritz crackers, crushed (I omit)
Grated Parmesan cheese for topping

Cook broccoli 5 minutes and drain. Combine all other ingredients, fold in broccoli. Put in 2-quart casserole and top with crushed cracker crumbs and grated Parmesan cheese. Bake 45 minutes at 350 degrees. For a luncheon or supper dish, add cubed baked ham. Delicious.
