CURRIED CHICKEN BUNDLES | |
2 c. chopped cooked chicken or turkey 1/2 c. chopped celery 1/3 c. part-skim Ricotta cheese 1/4 c. shredded carrot 1 tsp. curry or to taste 1 tbsp. apricot preserves 1 tsp. cinnamon Dash salt (optional) 10 oz. pkg. refrigerated pizza dough In a medium bowl, mix the chicken, celery, Ricotta, carrot, preserves, curry, cinnamon and salt. Set this mixture aside. Unroll the pizza dough and cut it into 6 squares. Divide the chicken mixture among the squares and bring the corners of the dough to the center, over the filling, stretching the dough as necessary. Pinch the edges to seal and place the bundles on an ungreased cookie sheet. Bake 12 to 15 minutes or until golden at 375 degrees. Wrap and chill to store. Bundles will keep up to 3 days in refrigerator or a month in the freezer. Can be reheated 30 to 60 seconds in microwave. This is a great take along lunch. |
