JELLY ROLL | |
3 lg. eggs 1 c. sugar 5 tbsp. water 1 tsp. vanilla 1 c. sifted flour 1 tsp. baking powder 1/4 tsp. salt Line a greased jelly roll pan, 10"x15" with wax paper. Beat eggs until lemony and thick. Beat in sugar gradually. Beat in vanilla and water. Sift flour, salt and baking powder together, add all at once. Blend until smooth. Pour into prepared pan. Bake at 375 degrees for 10 to 15 minutes. Sprinkle a towel with powdered sugar (a teaspoon of flour added to powdered sugar keeps sugar from melting). Remove jelly roll from oven immediately, turn upside down onto towel. Roll up towel and all. Cool. Unroll, remove towel, spread with jam or jelly. Roll up jelly roll. Rewrap towel around rolled up jelly roll, keep cool in refrigerator. Slice to serve. |
