ZUCCHINI RELISH 
10 c. unpeeled zucchini
4 c. onions
2 whole sweet peppers, 1 red, 1 green

Grind coarsely these three vegetables and mix. Add 5 tablespoons of salt, mix well. Let stand overnight in refrigerator. Next morning, drain, rinse well with cold water, drain.

SYRUP:

2 1/4 c. white vinegar
5 c. sugar
1 tsp. dry mustard
2 tsp. celery seed
1 tsp. nutmeg
1 tsp. turmeric
1 tsp. corn starch
1/4 tsp. black pepper

Heat these 8 items to dissolve sugar. Add vegetable mixture, bring to a boil. Boil for 5 minutes, stir constantly. Put in hot sterilized jars and seal.
