3 c. dry split peas 5 c. water 1 bay leaf 2 tsp. salt #II: 2 tbsp. oil 1 c. minced onion 3 cloves crushed garlic 1 c. minced celery 1 thinly sliced potato 2 c. sliced carrots #III: 1/4 c. dry red wine 1/4 tsp. thyme Few drops sesame oil #IV: 3 tbsp. vinegar 1 c. chopped tomatoes 1/4 c. chopped parsley Simmer group #1 - 3 to 4 hours. Remove bay leaf. Saute in oil Group II. Add to Group I. Cook 30 minutes. 15 minutes before done, add Section III. At serving time add Group IV. |
