WHOOPIE PIES 
1 c. sugar
5 tbsp. shortening (Crisco)
1 egg
1 c. milk
5 tbsp. Hershey's cocoa
2 c. flour
1 1/2 tsp. baking soda
1/4 tsp. salt

Cream sugar and shortening; beat in egg. Sift all dry ingredients together twice. Add alternately with milk, blending all ingredients well. Drop slightly rounded tablespoonfuls on ungreased cookie sheet and flatten. Bake at 400 degrees for 7 minutes or until springy when touched. Makes 36 cookies.

FILLING:

2 tbsp. flour
1/2 c. milk
1/2 c. sugar
1/4 c. Crisco
1/4 c. butter
1 tsp. vanilla

Cook flour and milk over low heat until thickened; let cool, stirring 2 or 3 times. Cream Crisco, butter, and sugar, mixing well. Add flour mixture, a little at a time. Beat with electric mixer until fluffy. Beat in vanilla. Spread 1 rounded teaspoon of filling between 2 cookies to form Whoppie Pie.
