BEET SALAD 
1 (3 oz.) pkg. lemon gelatin
1 c. hot water
3 tbsp. vinegar
1/2 tsp. salt
2 tbsp. grated onion
1 c. diced, cooked beets
1/2 c. diced cucumbers

Dissolve gelatin in 1 cup hot water. Add beet juice, vinegar, salt, and grated onion. Partly chill, then add diced beets and cucumbers. Serve on lettuce, spinach, or other fresh greens.
