ZUCCHINI MUFFINS 
2 1/2 c. flour
1 c. sugar
1/2 c. brown sugar
1 c. chopped nuts
2 c. shredded zucchini
3/4 c. oil
1/2 c. uncooked oats
1 tbsp. baking powder
1 tsp. salt
4 eggs
1 1/2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg

Beat eggs; add zucchini and oil to dry ingredients. Stir with spoon to mix. Batter should be lumpy. Pour into muffin cups and bake at 400 degrees about 25 minutes. Add chopped apple and raisins if desired or sprinkle with cinnamon and sugar. These muffins are moist and light and they freeze well.
