ZUCCHINI PIE 
4 c. zucchini, peeled, quartered, seeded and sliced
3/4 c. sugar
1/4 c. flour
1 tsp. cinnamon
1 tsp. salt
1/4 c. lemon juice
2 eggs, lightly beaten
top and bottom pie crusts

Mix sugar, flour, cinnamon and salt. Toss with zucchini. Pour the lemon juice over the mixture. Put the mixture into the pie shell. Pour the beaten eggs over the mixture in the pie shell and place the top crust over the pie. Add a few slashes near the center to allow for steam to escape. Place pie on a cookie sheet and bake in a 400°F oven for 1 hour or a few minutes longer, until golden brown.
