PECAN LOGS 
1/4 lb. butter
1 lb. brown sugar
3 tsp. vanilla extract
2 eggs, beaten
2 c. chopped pecans
1 1/2 c. pancake mix or Bisquick
Confectioners' sugar

Melt butter in large mixing bowl about 1 minute in microwave. Into butter, mix 1 pound brown sugar, 2 eggs (well beaten), 3 teaspoons vanilla extract, 2 cups chopped pecans, and 1 1/2 cups pancake or biscuit mix. Mix thoroughly and pour into greased 12 x 8 x 2 inch dish. Microwave on high 8 to 10 minutes, rotating dish 1/2 turn every 3 minutes. Center will not be quite set but will form as it cools. When cool, cut into long thin bars. Sprinkle with confectioners' sugar or roll cut bars into confectioners' sugar. Makes 40 to 50 bars.

Since microwave ovens vary in power, you may need to adjust your cooking time.
