VIDALIA ONION CASSEROLE 
5-6 lg. Vidalia onions (any sweet onions will do)
2 c. grated med. Cheddar cheese
1 stick butter (butter doesn't work well)
1 roll crushed Ritz crackers

Slice onions. Saute onions with the stick of butter over medium heat. Cook until very soft. Place in a casserole dish. Top with the crushed crackers then the cheese. Bake at 350 degrees until the cheese melts. Sounds weird but taste fantastic! Serves 6-8 people.
