ROSALIA'S ALIA OLIA | |
This is so easy, my great grandmother used to make this all the time. It's really hearty peasant food. 1 (16 oz.) box spaghetti 3 tbsp. extra virgin olive oil 4 cloves garlic 1 head broccoli rabe (cleaned and ends trimmed) 4 tbsp. grated cheese (or to taste) Heat skillet with olive oil, chop garlic and fry until golden brown. Boil spaghetti in the mean time. Drop your broccoli rabe into the frying pan with your garlic (over low heat) and sauté until limp. Strain the pasta, add back to you pasta pot, pour in oil, garlic and broccoli rabe and toss until oil coats pasta. You may have to add a few more tablespoons of olive oil, it's OK if it's from the bottle. Serve with grated cheese and accompany with fresh Italian bread. Note: This recipe can also use sausage and olives, spinach, anchovies, sun-dried tomatoes and any other add-on you prefer. Submitted by: Jennifer |
