OLD FASHIONED CHEESECAKE 
Recipe will usually fill 2 ready-made crusts.

Crust:

18 graham crackers or 1 c. crumbs
2 tbsp. sugar
3/4 stick butter

Mix graham cracker crumbs and sugar together. Add melted butter. Mix well. Press firmly in bottom of pan (spring-form cake pan is best), but not necessary.

Filling:

3 (8 oz. each) pkgs. cream cheese
3/4 c. sugar
3 eggs, beaten
2 tbsp. lemon juice
pinch of salt

Cream cheese and sugar. Add eggs, lemon juice and salt. Mix well.

Topping:

2 c. sour cream
2 tbsp. sugar
1 tsp. vanilla

Can be mixed while crust and filling are cooking. Mix sour cream, sugar and vanilla well.

Bake crust and filling about 20 minutes at 375°F. Remove from oven. Set oven for 475°F. Spoon topping mixture over cooked cheese cake.

Bake for 5 minutes at 475°F. Chill before serving.
