BAKED COD 
1 1/2 lbs. cod fillet
4 med. carrots
1 tbsp. butter
1/4 tsp. pepper
1 or 2 tbsp. chopped parsley
4 med. potatoes
1 tbsp. lemon juice
1 1/2 tsp. salt
1/2 c. Mozzarella cheese

Preheat oven to 375 degrees. Slightly grease a 13"x9" baking pan. Cut fish into 2" square pieces and put in pan. Sprinkle with lemon juice. Place 2" pieces of carrots and quartered potatoes between pieces, and place dabs of butter and pieces of potato over fish. Season with salt and pepper. Sprinkle grated cheese over all; cover and bake 1 hour. Garnish with parsley. Serves 4.

Fish came out great.. But carrots and potatoes were still too hard after the hour bake time was up.. All the moisture from the ingredients turned this into more of a stew than a bake..
