JEN'S CREAMY POTATO SOUP 
10 large potatoes (peeled and cubed)
1/2 cup (1 stick) butter
1 (8 oz.) pkg. cream cheese (at room temp.)
salt and pepper, to taste
1/2 to 1 cup milk
crumbled cooked bacon (optional)
shredded cheese (optional)

Bring potatoes to a boil in a large pot (there should be just enough water to cover the potatoes).

Add stick of butter and season with salt and pepper, to taste. Boil for 15 minutes. Check potatoes to make sure they are cooked all the way through.

Continue with a low simmer and add room temperature cream cheese cut into cubes (this makes it easier for them to melt). Add 1/2 to 1 cup of milk (depending on desired consistency) and stir until completely mixed.

Serve topped with bacon and/or cheese if desired.

This recipe was so easy to make and so delicious! I loved the cheesy flavor of the cream cheese. It had a slightly crunchy texture from the bacon, which is always a plus. This is definitely a go-to dish for me!
