DAVID EYRE PANCAKES 
1/2 c. flour
1/2 c. milk
2 eggs, lightly beaten
Nutmeg (a good shake)
4 tbsp. butter
1/4 c. confectioners' sugar
Juice of 1/2 lemon (1 tbsp.)
12 inch skillet with oven proof handle or a 9 or 10 inch pie plate, metal or glass

Preheat oven to 425 degrees. In mixing bowl combine flour, milk, eggs and nutmeg. Beat lightly. Leave a little lumpy. Melt butter in oven in skillet. (Be careful, handle gets hot too!) Pour batter in skillet. Bake 15 to 20 minutes. (Batter will climb sides of skillet.)

Remove from oven and sprinkle with confectioners' sugar. Return to oven briefly. Remove from oven and sprinkle with lemon juice. Serve in wedges. DON'T TRY TO DOUBLE RECIPE.
