SCALLOPED POTATOES AND SAUSAGE 
3 med. potatoes
2 tbsp. butter
1/2 c. chopped onion
1/4 c. chopped green peppers
1/2 lb. Polish sausage, sliced
1 c. grated Parmesan cheese
4 eggs
1 1/2 c. milk
1/2 tsp. salt
1/8 tsp. hot sauce

Cook potatoes in jackets in boiling water 35-40 minutes until tender but not soft. Drain and cool. Remove skins and cut in 1/8 inch slices. Melt butter in skillet; add onion and green pepper; cook until tender. Layer potatoes, sausage, cheese, and onion in greased casserole. Repeat layers, ending with potatoes. Mix eggs, milk, salt, and hot sauce; beat well. Pour over potatoes and bake at 375 degrees for 30 minutes or until custard is set. Let stand 5 minutes before serving. Serves 8.
