SALMON CAKES 
1 (15 oz.) can red salmon
1/2 sleeve or approx. 15 Saltines
2 eggs

Clean salmon, discarding all but the red salmon meat. Break up with fork. Crush crackers in plastic bag with rolling pine until they are fine. Add to salmon. Beat eggs and add to mixture. Mix well. Form into patties. Fry in butter until brown.
