THICK WHITE SAUCE 
3/4 c. butter
3/4 c. flour
3/4 tsp. salt
3/4 tsp. pepper
3 c. milk
1/2 c. cheese, optional

Melt butter over low heat in heavy saucepan. Stir n flour, salt and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Bring to boil, stirring constantly. Boil 1 minute. Add cheese and stir until melted (if you like cheese). Pour over vegetables. Makes 3 cups (3 1/2).
