IRISH POTATOES 
3 oz. cream cheese
2 1/2 c. 10x sugar
1/4 tsp. vanilla extract
1 tbsp. cinnamon

(I don't like cinnamon so I use shredded coconut instead.)

Soften cream cheese at room temperature. Add sugar gradually then add vanilla. Beat until smooth. Shape into small balls, then roll in cinnamon.
