CHILI 
3 lbs. extra lean coarse ground beef
1/2 c. onion, finely chopped
1/4 c. green pepper, finely chopped
3-4 pickled jalapeno peppers, finely chopped
3 med. fresh tomatoes, diced or 1 (16 oz.) can stewed tomatoes
1 minced clove garlic
1 tsp. crushed red pepper
1 tsp. salt
1/2 tsp. coarse ground black pepper
1/4 tsp. crushed oregano
1 (12 oz.) can tomato paste
3 c. water

Crumble beef into large skillet or Dutch oven. Add onion, bell pepper, garlic, jalapeno pepper, red pepper, salt, black pepper and oregano. Cover, stir occasionally and cook until meat is almost done. Add tomato paste, water and tomatoes. Simmer, stir occasionally, until meat is completely done and tomatoes are blended and cooked well.
