ZUCCHINI BREAD 
3 eggs
1 c. oil
2 tsp. vanilla
2 c. grated zucchini
1 sm. can (8 oz.) crushed pineapple
2 c. sugar
1 tsp. baking soda
1/2 tsp. baking powder
2 or 3 tsp. cinnamon
1/4 tsp. allspice if desired
3 c. flour (can substitute 1 c. flour for 1 c. oatmeal if desired)
1 can Angel Flake coconut, if desired
1 c. chopped walnuts, if desired
1 c. raisins, if desired

Beat eggs, add oil, sugar, zucchini, vanilla and pineapple; mix well. Combine all dry ingredients and add to oil mixture and stir. Add nuts, raisins and/or coconut if desired. Bake in 2 greased and floured bread pans, lined with wax paper. Bake 350 degrees for 1 hour.
