TURKEY FRAME SOUP | |
1 turkey frame (leftover from Thanksgiving) 6 stalks celery, chopped (celery leaves too if you want) 2 large onions, chopped 1/2 bag frozen mixed vegetables (optional; I prefer the way my mom made it without) 4 bouillon cubes (any flavor) 1 tbsp. parsley flakes 1 tsp. salt (remember bouillon cubes are salty) 1 tsp. onion powder 1/2 tsp. garlic powder water, enough to cover 1 cup macaroni (egg noodles can also be used) 1/2 cup rice 1 cup vegetable juice (I use V-8) 1 (28 oz.) can whole tomatoes Add all ingredients to a large pot except macaroni, rice, vegetable juice and tomatoes. Fill pot with enough water to cover turkey carcass. Simmer for a couple of hours. Add macaroni and rice. Continue to simmer till tender. Add vegetable juice and whole tomatoes. Serves many!
