DIABETIC PUMPKIN PIE 
1 c. pumpkin
1 egg
2 egg whites
1/2 c. biscuit mix
1/8 tsp. salt
2 tsp. pie spice
2 tsp. vanilla
3 tsp. Sweet and Low
1 can skim evaporated milk

Put all ingredients in a blender and mix well. Spray a 9-inch pie pan with Pam. Bake at 350 degrees until set, about 35-45 minutes. Makes own crust.
