NUT COOKIES 
1/2 c. butter
7 tbsp. brown sugar or substitute to equal 1 c. brown sugar
1 egg
1/2 c. ground walnuts
6 tbsp. plain low-fat yogurt
2/3 tsp. maple or walnut flavoring
1 tsp. vanilla
1 1/2 c. self-rising flour or all-purpose flour
1/2 tsp. salt, if using all-purpose flour
1/2 tsp. baking powder, if using all-purpose flour
Omit salt & baking powder if you use self-rising flour

Cream butter with sugar or sugar substitute. Add beaten egg, walnuts and yogurt; cream again; add flavorings. Sift dry ingredients together. Gradually add dry ingredients to creamed ingredients; beat well.

Drop by spoonsful onto a baking sheet that has been sprayed with nonstick vegetable spray. Flatten with fork. Bake at 375 degrees until edges are brown, about 15 minutes. Cool on rack; store in a tight container in a cool place, or freeze.
