BEST ZUCCHINI BARS 
BARS:

2 c. sugar
1 c. oil
3 eggs
2 c. flour
1 tsp. cinnamon
1 tsp. salt
2 tsp. baking soda
1/4 tsp. baking powder
1 tsp. vanilla
2 c. shredded zucchini
1 sm. carrot, shredded
3/4 c. rolled oats
1 c. chopped nuts

Beat together sugar, oil and eggs in large bowl. Beat in flour, cinnamon, salt, soda, baking powder and vanilla. Beat 1/2 minute until well mixed. Fold in zucchini, oats, carrots and nuts and mix well. Pour into a 15"x10"x1" pan (jelly roll size). Bake at 350 degrees for 15 to 20 minutes, or until done.

FROSTING:

1/2 c. butter, softened
1/4 tsp. almond flavoring
2 tsp. vanilla
2 1/2 c. powdered sugar
1 (3 oz.) pkg. cream cheese, softened

Beat all ingredients together until smooth. Cool bars and frost.
