SPINACH SALAD WITH PEARS | |
6 slices bacon 6 c. torn fresh spinach 1/3 c. sliced green onions 3 unpeeled and cored pears, cut into 1/2 inch cubes 1/3 c. white wine vinegar 2 tbsp. brown sugar 1/4 tsp. pepper In a large skillet, fry bacon until crisp; drain and set aside. Reserve 2 tablespoons bacon drippings in the skillet. In large bowl, combine spinach, onions, pears and reserved bacon. Add vinegar and brown sugar to bacon drippings; heat just to boiling and add the pepper. Pour over spinach and toss lightly. Serve warm. Serves: 6. |
