CHICKEN JUBILEE 
1/2 bag mixed frozen vegetables
1 can cream of chicken soup, diluted with 1/2 c. water
1/2 c. mayonnaise
1/2 tsp. lemon juice
2 c. chicken or turkey, cooked & cubed

TOPPING:

1/2 c. Cheddar cheese, grated
Buttered bread crumbs, potato chips or corn flakes (optional)

Mix together the first 5 ingredients and pour in a baking dish. Top with grated Cheddar cheese and any of the optional ingredients. Bake at 350 degrees for 45 minutes.
