PEASANT BREAD 
6 c. liquid (4 c. water - 2 c. milk, warm)
3 pkgs. dry yeast

Dissolve yeast in 1/4 cup warm water. Let stand 10 minutes, then add to warm liquid. 3/4 c. brown sugar or 1/2 c. honey and 1/4 c. molasses 3 tbsp. salt 1/2 c. oil 2 c. med. rye flour 4 c. whole wheat flour 6 c. white flour

Add 2 to 4 cups more white flour while kneading. Mix as any bread - knead 15 minutes. Let raise - knead - let rise again. Knead while shaping (makes 6 round loaves). Let raise until double. Bake 40 minutes at 350 degrees. Use round cake pans or make into Finnish Flat bread or regular loaves.
